My Tips for Perfect, Fluffy Pancakes!

If you are trying to make big, fluffy pancakes, I have some tips for you. 

First, you want a good quality pancake mix. I suggest the Pearl Milling Company Buttermilk pancake mix. If you use original mix or a different brand, they do not turn out the same. 

I follow the directions on the box; simply add water. I like to add a pinch of cinnamon to the mix. Be sure to stir until all the dry ingredients are incorporated. You don't want any lumps.

Next, your stovetop pan needs be hot and over medium heat. Before spooning in your pancake mixture you need to spray your pan with a good quality cooking oil. Coconut oil adds a nice flavor, but avocado oil or vegetable oil will work as well. 

My next tip is optional, but really makes a difference!

I use a pancake flipper griddle pan. It makes perfect circles every time. Spraying with a cooking oil will help give a crisp edge and fluffy, bouncy cake on the inside.

I spoon in my pancake mixture when the pan is nice and hot. I fill in each section and leave the top open until I see bubbles start to form on the top of the pancakes. Then I close the lid and flip. Make sure the lid is also sprayed with non-stick cooking oil. It only takes another 30-45 seconds to finish cooking the second side. 

Last, remove your pancakes from the pan and enjoy! I like to butter each cake and use a light amount of syrup.
